so what i understand about professional wine tasting is:

1. you spin the wine around in the glass for like two minutes
2. you "smell" the wine for "notes"
3. you take a sip and swish it around in your mouth for like a minute
4. you spit it out in a bucket (why the hell would you swallow it?)
